Ingredients
  

Main Ingredients
  • 2 1/4 lb 1kg grilling potatoes (like Yukon Gold)
  • 1/4 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 celery stalk finely chopped
  • 1 bunch scallions chopped
  • 1 tbsp capers rinsed
  • Salt and black pepper

Method
 

Instructions
  1. Boil the potatoes whole in salted water for 20-25 minutes until tender. Drain and let cool completely.
  2. Peel the cold potatoes and cut them into 1-inch cubes.
  3. In a large bowl, mix the mayonnaise, mustard, celery, scallions, capers, and lemon juice.
  4. Add the cubed potatoes and toss gently to coat without breaking them up.
  5. Refrigerate for at least 1 hour before serving.
