Main Ingredients
  • Hash: 6oz white potato grated, 2.5oz sweet potato (grated), 1 small red onion (chopped)
  • Flavor: 1.75oz pancetta chopped, 1/2 cup grated Cheddar, 2 tbsp olive oil
  • Filling: 8 eggs

  • Mixing bowl
  • Clean kitchen towel

Method
 

Instructions
  1. Squeeze grated potatoes dry in a clean towel. Removing moisture is key for crispiness.
  2. Mix potatoes with onion, pancetta, cheese, and oil. Season with salt and pepper.
  3. Press mixture into 8 holes of a greased muffin tin to form deep nests.
  4. Bake at 400 degrees F (200 degrees C) for 15-20 mins until edges brown.
  5. Crack an egg into each nest. Bake 10-15 mins further until whites are set.
