  • Base: 3 egg whites 1 tbsp unsalted butter
  • Filling: 1.75oz baby spinach 1oz smoked salmon (torn)
  • Seasoning: Pinch of nutmeg black pepper

Method
 

Instructions
  1. Whisk egg whites in a bowl until light and frothy (soft peaks).
  2. Sauté spinach in butter with a pinch of nutmeg until wilted and dry. Spread evenly in the pan.
  3. Pour frothed whites over the spinach. Cook on low heat for 1-2 mins until the bottom sets.
  4. Add salmon pieces to one side. Gently fold the omelet in half.
  5. Cook for 1 minute more until the center is set but still fluffy.
