Ingredients
  

Main Ingredients
  • Fillings: 2 red potatoes par-boiled and cubed, 1 onion, 1 red & 1 green pepper, 1 jalapeño, 1 lb chorizo (sliced)
  • Eggs: 8 eggs 1 tsp chipotle paste, 2 cups grated Cheddar
  • Wrap: 4 large tortillas sour cream, guacamole

  • Frying pan
  • Saucepan (for boiling)
  • Bowl

Method
 

Instructions
  1. Par-boil potato cubes for 5 mins; drain. Sauté onion and peppers until soft, then add potatoes and cook until golden.
  2. In a separate pan, fry chorizo slices until browned; add to the potato mixture.
  3. Whisk eggs with chipotle paste. Scramble in the chorizo pan. Stir in cheese until melted.
  4. Spread tortillas with sour cream. Layer with potato hash, cheesy eggs, and guacamole.
  5. Roll up tightly, tucking in the ends. Serve hot.
