Ingredients

  • 9 fresh ripe round tomatoes
  • 3 tablespoons chopped parsley
  • 2 teaspoons chopped garlic
  • 3 tablespoons extra virgin olive oil
  • Salt & Pepper

Instructions

  1. 1Preheat oven to 325°F.
  2. 2Halve tomatoes. Arrange cut-side up in baking dish (snugly).
  3. 3Sprinkle with parsley, garlic, salt, pepper.
  4. 4Drizzle with oil.
  5. 5Bake 1 hour+ until shrunk to half size and edges blackened.
  6. 6Serve warm or room temp.
