Main Ingredients
  • Meat: 14oz spicy chorizo skinned, 7oz chicken livers (chopped)
  • Veg: 1 onion 1 celery stalk, 1 red & 1 green pepper, 1 red chili
  • Rice: 1 2/3 cups long-grain rice 3 1/4 cups chicken stock
  • Spice: Paprika coriander seeds, thyme, oregano

  • Cast iron casserole dish (stovetop to oven)
  • Knife

Method
 

Instructions
  1. Sauté the ‘holy trinity’ (onion, celery, peppers) until soft; remove.
  2. Fry the crumbled chorizo and livers until browned. Stir in fresh chili, garlic, and spices.
  3. Return the vegetables to the pot. Add the rice and hot chicken stock.
  4. Cover and bake at 325 degrees F (160 degrees C) for 40 mins until liquid is absorbed.
  5. Stir in fresh herbs and fluff with a fork before serving.
