These homemade doughnuts are light and airy thanks to a double rise. They are filled with a rich, dark chocolate custard (crème pâtissière) and rolled in sugar.

Ingredients
  

Main Ingredients
  • Dough: 2/3 cup milk 5 tbsp butter, 2 tsp yeast, 1/3 cup sugar, 2 eggs, 2.25 cups all-purpose or “00” flour
  • Filling: 3/4 cup milk 2 egg yolks, 1/4 cup sugar, 1 tsp cornstarch, 2/3 cup dark chocolate (chopped)

Equipment

  • Deep fryer
  • Mixer (dough hook)
  • Piping bag

Method
 

Instructions
  1. Make yeast dough and rise 2 hours. Form balls and rise another 1-2 hours.
  2. Make custard: cook milk, yolks, sugar, and starch until thick. Stir in chocolate. Cool.
  3. Fry doughnuts at 375 degrees F (190 degrees C) for 1 min per side.
  4. Toss warm doughnuts in sugar.
  5. Fill cooled doughnuts with the chocolate custard.
