Inspired by Adriatic cannocchie, these shrimp are split down the back, skewered straight, and marinated in olive oil, bread crumbs, and plenty of pepper before grilling.

- Wash unshelled shrimp and dry well.
- Cut the shell along the back down to the tail. Run a toothpick between flesh and shell to straighten the shrimp.
- Put in a bowl with all other ingredients. Be liberal with salt and pepper. Toss to coat, forcing marinade under the shells.
- Steep at room temperature for at least 30 minutes.
- Preheat grill or broiler.
- Cook very close to heat, about 2 minutes on one side and 1 1/2 on the other. Serve with plenty of napkins.
