Ingredients
  

Main Ingredients
  • 1/4 cup extra virgin olive oil (60 ml)
  • 3 tablespoons chopped onion (45 ml)
  • 2 teaspoons chopped garlic (10 ml)
  • Chopped hot red chili pepper, to taste
  • 3 tablespoons chopped parsley (45 ml)
  • 1 2/3 cups canned imported Italian plum tomatoes, cut up, with their juice
  • Salt
  • 1 1/2 to 2 pounds unshelled medium shrimp (700-900 g)
  • Grilled or oven-browned slices of crusty bread

Method
 

Instructions
  1. Sauté onion in oil. Add garlic and chili. When garlic is pale gold, add parsley.
  2. Add tomatoes and salt. Simmer 20 minutes until oil floats free.
  3. Shell and devein shrimp.
  4. Add shrimp to sauce, cover, and cook 2 to 3 minutes.
  5. Serve at once with bread.
