A deeply flavorful fish stew made by enriching the broth with pureed fish heads. Contains squid, shrimp, clams, mussels, and fish pieces in a savory tomato-wine base.

Ingredients
  

Main Ingredients
  • 3 to 4 pounds assorted fish (assorted varieties), scaled and gutted, heads reserved
  • 1/2 pound or more unshelled shrimp
  • 1 pound whole squid OR 3/4 pound cleaned
  • 1 dozen littleneck clams AND 1 dozen mussels
  • 3 tablespoons chopped onion
  • 1/3 cup extra virgin olive oil (80 ml)
  • 1 1/2 teaspoons chopped garlic
  • 3 tablespoons chopped parsley
  • 1/2 cup dry white wine
  • 1 cup canned imported Italian plum tomatoes, cut up
  • Salt & Hot red chili pepper
  • Grilled bread

Method
 

Instructions
  1. Steam clams/mussels. Save meat and filtered juice.
  2. Make sauce with onion, oil, garlic, wine, tomatoes. Simmer 25 mins.
  3. Add fish heads, salt, pepper. Cook 12 mins. Remove heads, bone them, and puree meat back into pan.
  4. Add squid. Simmer 45 mins. Add shellfish juice.
  5. Add fish pieces. Cook 5 mins. Add shrimp, cook 2-3 mins. Add shellfish meat.
  6. Serve immediately with bread.
