Veal rolls filled with a rich anchovy-tomato paste and mozzarella cheese. Braised in Marsala for a complex, savory finish.

Ingredients
  

Main Ingredients
  • 8 flat anchovy fillets
  • 3 tablespoons butter
  • 1/4 cup chopped parsley
  • 1/3 cup canned plum tomatoes, drained
  • 1/2 pound mozzarella, sliced thin
  • 1 1/2 pounds veal scaloppine, flattened
  • Flour
  • 1/2 cup dry Marsala wine

Method
 

Instructions
  1. Cook anchovies in butter to a paste. Add parsley, tomatoes. Cook until thick.
  2. Spread paste on veal. Add mozzarella. Roll and tie with twine.
  3. Dredge in flour. Brown in butter. Remove.
  4. Add Marsala, reduce.
  5. Return rolls to coat in glaze.
  6. Remove strings and serve.
