  • 2 tablespoons butter
  • 1 teaspoon garlic chopped coarse
  • 2 flat anchovy fillets, chopped fine
  • 2 tablespoons chopped parsley
  • 3 tablespoons vegetable oil
  • 4 veal loin chops
  • Flour
  • Salt & Black pepper

Method
 

Instructions
  1. Make sauce: Cook garlic in butter, melt in anchovies, add parsley. Set aside.
  2. Dredge chops in flour. Fry in oil until done. Remove.
  3. Deglaze pan with a little water.
  4. Return chops. Pour anchovy sauce over them.
  5. Turn to coat and serve.
