- Sauté onion and pancetta in fat until gold.
- Brown chops deeply. Onion will darken.
- Add nutmeg, salt, pepper, wine.
- Simmer covered for 1 hour until very tender.
- Spoon off excess fat.
- Beat yolk and lemon. Pour over hot chops.
- Turn to coat and serve.
