Main Ingredients
  • 3 tablespoons extra virgin olive oil
  • 2/3 cup chopped onion
  • A 3-pound rack of spareribs, cut into finger-size pieces
  • 2/3 cup chopped carrot
  • 2/3 cup chopped celery
  • 1 1/2 cups chopped plum tomatoes

Method
 

Instructions
  1. Sauté onion in oil. Add ribs and brown.
  2. Add carrot and celery. Cook until nearly tender.
  3. Add tomatoes, salt, pepper.
  4. Cover (askew) and simmer 1 to 1.5 hours.
  5. Serve.
