Ingredients
  

Main Ingredients
  • 3 medium artichokes (very fresh)
  • 2 pounds fresh fava beans
  • 1 pound fresh peas
  • 1 cup fresh wild fennel (or dill)
  • 1 1/2 cups sweet onion (Vidalia/Maui)
  • 1/3 cup extra virgin olive oil

Method
 

Instructions
  1. Trim artichokes. Shell beans and peas.
  2. Sweat thinly sliced onion in oil until soft.
  3. Add fennel and artichokes. Cover and cook 5 mins.
  4. Add fava beans (cook 10-15 mins).
  5. Add peas. Cook 5 mins more until everything is tender.
  6. Let settle before serving.
