- Cook beans with butter and little water until tender and dry.
- Make medium béchamel sauce.
- Beat eggs with Parmesan and nutmeg.
- Mix eggs, béchamel, and beans.
- Pour into buttered/crumbed soufflé mold.
- Bake at 375°F for 45 mins until crusted.
- Unmold and serve.
