Mashed Potatoes, Bolognese Style (Parmesan & Nutmeg)
Rich mashed potatoes beaten with hot milk, Parmesan cheese, and a hint of nutmeg. Incredibly fluffy.

- Boil unpeeled potatoes until tender. Peel hot.
- Mash into top of double boiler over simmering water (with butter).
- Beat in hot milk gradually.
- Beat in Parmesan.
- Continue adding milk and beating until fluffy.
- Add salt and grated nutmeg.
- Serve.
