Rich mashed potatoes beaten with hot milk, Parmesan cheese, and a hint of nutmeg. Incredibly fluffy.

Ingredients
  

Main Ingredients
  • 1 pound boiling potatoes
  • 3 tablespoons butter
  • 1/4 cup milk (hot)
  • 1/3 cup grated Parmesan cheese
  • Salt
  • Whole nutmeg

Method
 

Instructions
  1. Boil unpeeled potatoes until tender. Peel hot.
  2. Mash into top of double boiler over simmering water (with butter).
  3. Beat in hot milk gradually.
  4. Beat in Parmesan.
  5. Continue adding milk and beating until fluffy.
  6. Add salt and grated nutmeg.
  7. Serve.
