Ingredients
  

Main Ingredients
  • Cake: 1.25 cups sugar 1 tsp salt, 3/4 cup super-fine (or cake) flour, 12 egg whites (room temp), 2 tsp vanilla
  • Sauce: 12oz blackberries 1 cup honey, juice of 1 lemon

Equipment

  • Tube pan (ungreased)
  • Food processor
  • Mixer

Method
 

Instructions
  1. Process sugar to fine powder. Sift half with flour.
  2. Whip egg whites and vanilla to stiff peaks. Gradually add remaining sugar.
  3. Gently fold in the flour mixture (do not deflate).
  4. Bake in an ungreased tube pan at 350 degrees F (180 degrees C) for 35 mins. Cool inverted.
  5. Simmer berries and honey for the sauce. Serve with cake.
