- Prepare Gratinéed Asparagus with Parmesan.
- Divide onto 4 warm plates.
- Fry eggs in butter sunny-side up (whites set, yolks runny).
- Slide an egg onto each portion of asparagus.
- Spoon hot butter from pan over eggs.
- Sprinkle with pepper and serve.
