The classic ‘Asparag alla Milanese’. Gratinéed asparagus topped with a sunny-side-up egg fried in butter.

Main Ingredients
  • Prepared Gratinéed Asparagus (from previous recipe)
  • 4 eggs
  • 2 tablespoons butter
  • Salt & Black pepper

Method
 

Instructions
  1. Prepare Gratinéed Asparagus with Parmesan.
  2. Divide onto 4 warm plates.
  3. Fry eggs in butter sunny-side up (whites set, yolks runny).
  4. Slide an egg onto each portion of asparagus.
  5. Spoon hot butter from pan over eggs.
  6. Sprinkle with pepper and serve.
