- Preheat oven to 450°F (230°C).
- Sauté onion in oil. Add garlic, then tomatoes and salt. Simmer 20 minutes.
- Add capers, oregano, and pepper. Remove from heat.
- Fold fillets. Dip in sauce and arrange in baking dish. Pour sauce over.
- Bake high (top rack) for about 5 minutes.
- If sauce is watery, remove fish and boil sauce down, then pour back over.
