Ingredients

  • 2/3 cup onion sliced very thin (160 ml)
  • 3 tablespoons extra virgin olive oil (45 ml)
  • 1/2 teaspoon garlic chopped very fine
  • 1 cup canned imported Italian plum tomatoes, cut up, with their juice
  • Salt
  • 2 tablespoons capers, soaked and rinsed
  • 2 teaspoons fresh oregano OR 1 teaspoon dried
  • Black pepper OR chopped hot red chili pepper
  • 2 pounds gray sole fillets OR other flatfish (900 g)

Method
 

Instructions
  1. Preheat oven to 450°F (230°C).
  2. Sauté onion in oil. Add garlic, then tomatoes and salt. Simmer 20 minutes.
  3. Add capers, oregano, and pepper. Remove from heat.
  4. Fold fillets. Dip in sauce and arrange in baking dish. Pour sauce over.
  5. Bake high (top rack) for about 5 minutes.
  6. If sauce is watery, remove fish and boil sauce down, then pour back over.
