Ingredients

  • 1½ pounds ground lamb
  • 4 ounces feta cheese, crumbled
  • 2 teaspoons smoked sea salt, store-bought or homemade ( here ), or fine sea salt

Instructions

  1. 1Preheat the oven to 350°F.
  2. 2Combine the ground lamb, crumbled feta cheese, and smoked sea salt in a large bowl. Mix thoroughly with your hands, being careful not to overwork the meat so the patties stay tender.
  3. 3Shape the mixture into eight patties, each about two and a half inches in diameter. Arrange them evenly on a rimmed baking sheet.
  4. 4Bake for 10 to 12 minutes until the patties are completely cooked through. Let them rest on the pan for a few minutes before serving so the juices can redistribute.

Notes

  • Storage: Keep leftover patties in an airtight container in the refrigerator for up to 4 days, or freeze them for up to a month.
  • Reheat: Place the patties on a rimmed baking sheet in a 350°F oven for about 5 minutes until warmed through.
  • Serving: These are excellent tucked into pita bread with tzatziki, or served over a simple Greek salad.
