  • 4 medium artichokes
  • 1/2 lemon
  • 1/4 cup extra virgin olive oil (60 ml)
  • 3 tablespoons freshly squeezed lemon juice (45 ml)
  • Salt
  • Black pepper, ground fresh from the mill
  • A 2- to 2 1/2-pound sea bass OR red snapper (1 kg)
  • A small sprig of fresh rosemary OR 1 teaspoon dried

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Trim artichokes and slice wafer-thin. Squeeze lemon over them.
  3. Mix oil, lemon juice, salt, and pepper.
  4. Place fish in baking dish. Add artichokes, dressing, and rosemary. Stuff some artichokes inside fish.
  5. Bake 15 minutes. Spoon juices over fish.
  6. Bake another 10-12 minutes. Serve from the dish.
