A beef brisket larded with pancetta and braised on a bed of onions. No liquid is added; the onions provide all the moisture.

Ingredients
  

Main Ingredients
  • 1/4 pound pancetta or salt pork
  • 2 pounds boneless beef roast (brisket)
  • 5 cloves
  • 4 medium onions, sliced very thin
  • Salt & Black pepper

Method
 

Instructions
  1. Lard meat with pancetta strips. Stud with cloves.
  2. Place sliced onions and remaining pancetta in pot.
  3. Place meat on top. Season.
  4. Cover tightly (use foil if needed). Bake at 325°F for 3.5 hours.
  5. Turn roast occasionally.
  6. Serve sliced with the onion sauce.
