A clean-tasting beef stew where vegetables are added in stages to preserve their individual textures and flavors. Braised in Barbera wine.

Ingredients
  

Main Ingredients
  • 2 pounds boneless beef chuck, cubed
  • 1 1/2 cups sturdy red wine (Barbera)
  • 1 pound small white onions, peeled
  • 4 medium carrots, cut into sticks
  • 4 celery stalks, cut into sticks
  • 1 1/2 pounds fresh peas (or frozen)
  • 1/4 cup extra virgin olive oil

Method
 

Instructions
  1. Brown meat in vegetable oil. Transfer to pot.
  2. Deglaze browning pan with 1/2 cup wine. Add to pot.
  3. Add onions, olive oil, remaining 1 cup wine to pot. Cover, simmer.
  4. After 15 mins, add carrots.
  5. After 45 more mins, add celery.
  6. After 45 more mins, add peas (if fresh).
  7. Cook until meat is tender.
  8. Serve.
