- Brown meat in vegetable oil. Transfer to pot.
- Deglaze browning pan with 1/2 cup wine. Add to pot.
- Add onions, olive oil, remaining 1 cup wine to pot. Cover, simmer.
- After 15 mins, add carrots.
- After 45 more mins, add celery.
- After 45 more mins, add peas (if fresh).
- Cook until meat is tender.
- Serve.
