Main Ingredients
  • Fish: 5 fillets 5.5oz each Mahi-Mahi or Snapper
  • Rub: 4 tbsp melted butter 2 tsp sea salt, 2 tsp garlic powder, 1 tsp cayenne, 1 tsp oregano/thyme
  • Salsa: 1/2 pineapple diced, 1 red pepper, 1 red onion, 1 jalapeño, juice of 2 limes, cilantro

Equipment

  • Cast iron skillet
  • Mixing bowl
  • Shallow dishes

Method
 

Instructions
  1. Combining diced pineapple, peppers, onion, jalapeño, lime juice, and cilantro for the salsa.
  2. In one shallow dish, mix the dry spices. Pour melted butter into another.
  3. Dip each fish fillet into the butter, then press firmly into the spice mix to coat.
  4. Heat a cast-iron skillet until smoking hot. Sear fish 2-3 mins per side until a black crust forms.
  5. Serve immediately with the chilled salsa.
