Ingredients

  • 2 tablespoons sugar
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons butter
  • ½ cup Corn Chex ® cereal
  • ½ cup Rice Chex ® cereal
  • ½ cup Wheat Chex ® cereal
  • ½ cup Honey Nut Cheerios cereal
  • ⅓ cup toasted sliced almonds*
  • ½ cup dried banana chips
  • ¼ cup dried blueberries or raisins

Instructions

  1. 1Combine the sugar and ground cinnamon in a small bowl and set aside.
  2. 2Melt the butter in a medium microwave-safe bowl on high power for about 30 seconds. Add the corn, rice, wheat, and honey nut cereals along with the sliced almonds, tossing to coat evenly. Microwave on high for 2 minutes, pausing halfway to stir.
  3. 3Sprinkle the cinnamon sugar and dried banana chips over the cereal mixture, tossing well. Microwave on high for 1 more minute, then spread the mixture onto paper towels to cool for 15 minutes.
  4. 4Transfer the cooled mix to a serving bowl and gently stir in the dried blueberries.
  5. 5For the alternative oven method, preheat the oven to 300°F. Combine the sugar and cinnamon in a small bowl, then melt the butter directly in an ungreased 13x9-inch baking pan inside the warming oven.
  6. 6Toss the cereals and almonds into the melted butter until coated, then bake uncovered for 10 minutes. Remove from the oven and stir in the cinnamon sugar and banana chips.
  7. 7Return the pan to the oven and bake for another 10 to 15 minutes until the banana chips start to brown. Spread the mix onto paper towels to cool for 15 minutes, then transfer to a bowl and add the blueberries.
  8. 8Pack the finished snack mix into a tightly sealed container to maintain freshness.
  9. 9Toast raw sliced almonds by cooking them in an ungreased skillet over medium heat for 5 to 7 minutes, stirring constantly until light brown.
