A simple, rustic braise of celery and potatoes, brightened with fresh lemon juice.

Main Ingredients
  • 5 medium potatoes
  • 1 large bunch celery
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt

Method
 

Instructions
  1. Peel and quarter potatoes. Trim celery stalks.
  2. Put celery, oil, salt, coverage water in pot. Simmer 10 mins.
  3. Add potatoes and lemon juice. Cover.
  4. Cook until both are tender (approx 25 mins).
  5. Boil away any excess water to leave just oil.
  6. Serve.
