Ingredients
  

Main Ingredients
  • 1 cup onion sliced very thin
  • 1/4 cup extra virgin olive oil plus 1 tablespoon
  • 2 garlic cloves, peeled and quartered
  • 4 cups red cabbage shredded fine, about 1 pound
  • A 3- to 4-pound chicken, cut into 8 pieces
  • 1/2 cup dry red wine
  • Black pepper, ground fresh from the mill
  • Salt

Method
 

Instructions
  1. Sauté onion and garlic in oil. Add cabbage, cover, simmer 40 mins until tender.
  2. Brown chicken in separate pan. Transfer legs/thighs to cabbage.
  3. Add wine and pepper to cabbage pot. Simmer covered for 40 mins.
  4. Add chicken breasts. Cook 10 mins more until tender.
  5. Cabbage should be melt-in-your-mouth tender. Serve.
