Ingredients

  • teaspoon strawberry jam on 1 peanut butter cookie ( page 188 ) and spread 1 teaspoon of ready-to-​spread vanilla frosting on second cookie; press cookies together to form sandwich.
  • 1 cup packed brown sugar
  • ¾ cup shortening
  • ¼ cup molasses
  • 1 egg
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt

Instructions

  1. 1Preheat the oven to 375°F. Line your baking sheets with parchment paper or silicone mats to prevent sticking.
  2. 2Beat the brown sugar, shortening, molasses, and egg in a large bowl with an electric mixer on medium speed until smooth. Stir in the flour, baking soda, cinnamon, ginger, cloves, and salt until a uniform dough forms.
  3. 3Scoop the dough by rounded teaspoonfuls and roll into balls. Dip the tops into granulated sugar. Arrange the balls on the prepared baking sheets with the sugared sides facing up, leaving about 3 inches of space between each. Leaving space is important because the cookies will spread as they bake.
  4. 4Bake for 10 to 12 minutes, or until the edges are just set. Transfer the cookies immediately to wire racks to cool completely.
  5. 5Spread a teaspoon of strawberry jam on the flat bottom of one cookie and a teaspoon of vanilla frosting on the bottom of another. Press the two cookies together gently to form a sandwich.

  • Storage: Keep the assembled sandwiches in an airtight container at room temperature for up to 3 days.
