The classic Roman spring dish. Young fava beans stewed with onion and guanciale (or pancetta).

Instructions
- Shell and wash beans.
- Sauté onion in oil until translucent.
- Add pancetta, cook 2-3 mins.
- Add beans, pepper, 1/3 cup water.
- Cover and simmer gently until tender (8-15 mins).
- Add salt at the end.
- Boil away excess water if needed. Serve.
