The classic Roman spring dish. Young fava beans stewed with onion and guanciale (or pancetta).

Ingredients
  

Main Ingredients
  • 3 pounds unshelled fresh fava beans
  • 1 thick slice pancetta (1/2 inch) cut into strips
  • 2 tablespoons chopped onion
  • 2 tablespoons extra virgin olive oil
  • Salt & Black pepper

Method
 

Instructions
  1. Shell and wash beans.
  2. Sauté onion in oil until translucent.
  3. Add pancetta, cook 2-3 mins.
  4. Add beans, pepper, 1/3 cup water.
  5. Cover and simmer gently until tender (8-15 mins).
  6. Add salt at the end.
  7. Boil away excess water if needed. Serve.
