Tender rings of squid coated in flour and fried to a crisp golden brown. A classic Italian appetizer or main dish served hot and salty.

Ingredients
  

Main Ingredients
  • 2 1/2 pounds whole squid OR 2 pounds cleaned squid, sliced into rings (1 kg)
  • Vegetable oil for frying
  • 1 cup flour, spread on a plate (140 g)
  • Salt

Method
 

Instructions
  1. Clean squid and slice into rings. Dry thoroughly.
  2. Heat 1 1/2 inches oil in frying pan to high heat. Test with one ring.
  3. Dredge squid in flour, shake off excess.
  4. Fry in batches until tawny gold. Use spatter screen.
  5. Drain on rack/paper towels.
  6. Sprinkle with salt and serve piping hot.
