3 tablespoons water
2 tablespoons maple syrup
1 small bunch thyme, plus 10 extra sprigs
2 cups (480 ml) fresh grapefruit juice (from about 3 large)
1 cup (240 ml) coconut water
1 grapefruit, cut into 10 segments
Instructions
1Combine the water, maple syrup, and the small bunch of thyme in a small pot. Bring the mixture to a boil over high heat. Reduce the heat to medium and simmer for 3 minutes. Remove the pot from the heat and let it cool slightly so it doesn't melt your popsicle molds.
2Pour the fresh grapefruit juice and coconut water into a pitcher. Stir in the cooled thyme syrup until well mixed.
3Drop one grapefruit segment and one extra thyme sprig into each popsicle mold. Pour the juice mixture over the fruit, leaving a little space at the top of each mold. Liquids expand as they freeze, so that extra room prevents overflows. Secure the covers, insert the popsicle sticks, and freeze for at least 4 hours until completely solid.
