Green beans baked in a light soufflé-like mixture of béchamel, eggs, and Parmesan.

Ingredients
  

Main Ingredients
  • 1 pound fresh green beans (cut into 1-inch pieces)
  • Béchamel Sauce (1.25 cups milk, roux)
  • 3 eggs
  • 3 tablespoons grated Parmesan cheese
  • Nutmeg
  • Bread crumbs

Method
 

Instructions
  1. Cook beans with butter and little water until tender and dry.
  2. Make medium béchamel sauce.
  3. Beat eggs with Parmesan and nutmeg.
  4. Mix eggs, béchamel, and beans.
  5. Pour into buttered/crumbed soufflé mold.
  6. Bake at 375°F for 45 mins until crusted.
  7. Unmold and serve.
