A colorful braise of green beans, sweet yellow peppers, and tomatoes with a kick of chili pepper.

Ingredients
  

Main Ingredients
  • 1 pound fresh green beans
  • 1 sweet yellow bell pepper (peeled and sliced)
  • 1 medium onion (sliced thin)
  • 2/3 cup chopped tomatoes
  • Hot red chili pepper
  • 3 tablespoons olive oil

Method
 

Instructions
  1. Peel yellow pepper raw, cut into strips.
  2. Sauté onion in oil until translucent.
  3. Add peppers and tomatoes. Simmer 20 mins.
  4. Add raw green beans, 1/3 cup water, salt, chili.
  5. Cover and simmer 20-30 mins until beans are tender.
  6. Boil away excess liquid if needed.
