Chicken split, flattened, marinated in lemon and olive oil, and grilled with a ‘devilish’ amount of black pepper. Smoky, peppery, and incredibly fragrant.

  • A 3 1/2-pound chicken
  • 1 tablespoon black peppercorns
  • 1/3 cup freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt

Method
 

Instructions
  1. Split chicken down the back and pound flat (spatchcock).
  2. Crack peppercorns. Rub into chicken.
  3. Marinate in lemon juice and oil for 2-3 hours.
  4. Grill (or broil) skin side first until brown.
  5. Turn, baste with marinade, and cook until tender.
  6. Sprinkle with more pepper to serve.
