- Split chicken down the back and pound flat (spatchcock).
- Crack peppercorns. Rub into chicken.
- Marinate in lemon juice and oil for 2-3 hours.
- Grill (or broil) skin side first until brown.
- Turn, baste with marinade, and cook until tender.
- Sprinkle with more pepper to serve.
