Inspired by Adriatic cannocchie, these shrimp are split down the back, skewered straight, and marinated in olive oil, bread crumbs, and plenty of pepper before grilling.

Ingredients
  

Main Ingredients
  • 2 pounds medium to large unshelled shrimp (900 g)
  • Round wooden toothpicks
  • 1 cup unflavored bread crumbs (240 ml)
  • Salt
  • 1/3 cup extra virgin olive oil (80 ml)
  • Black pepper, ground fresh from the mill

Method
 

Instructions
  1. Wash unshelled shrimp and dry well.
  2. Cut the shell along the back down to the tail. Run a toothpick between flesh and shell to straighten the shrimp.
  3. Put in a bowl with all other ingredients. Be liberal with salt and pepper. Toss to coat, forcing marinade under the shells.
  4. Steep at room temperature for at least 30 minutes.
  5. Preheat grill or broiler.
  6. Cook very close to heat, about 2 minutes on one side and 1 1/2 on the other. Serve with plenty of napkins.
