These crispy grilled cheese sandwiches get a savory upgrade with thick slices of Italian bread and melted provolone. A rich spread of softened butter mixed with freshly grated Parmesan coats the outside of each sandwich. When cooked on a hot griddle, the Parmesan crust turns deeply golden and crunchy. Cut them into small quarters to create the perfect bite-sized snack or appetizer. Serve them warm alongside a bowl of marinara sauce for dipping.

Ingredients
½ cup butter, softened
½ cup freshly grated Parmesan cheese
16 Italian bread slices
16 provolone cheese slices
Instructions
1Mix the softened butter and grated Parmesan cheese in a small bowl. Spread this mixture evenly over one side of all sixteen bread slices.
2Lay eight of the bread slices on a sheet of wax paper with the buttered side facing down. Place two slices of provolone cheese onto each piece of bread.
3Place the remaining eight slices of bread on top of the cheese layer. Make sure the buttered sides are facing outward.
4Heat a griddle or nonstick skillet over medium heat. Cook the sandwiches in batches for about three minutes per side, pressing down gently with a spatula until the bread is golden brown and the cheese is fully melted.
5Remove the sandwiches from the skillet and cut each one into four smaller pieces.
Notes
Serve the sandwich bites warm with a side of marinara sauce for dipping.
For a complete meal, pair these sandwiches with carrot and celery sticks or fresh fruit.
