A deeply flavorful fish stew made by enriching the broth with pureed fish heads. Contains squid, shrimp, clams, mussels, and fish pieces in a savory tomato-wine base.

- Steam clams/mussels. Save meat and filtered juice.
- Make sauce with onion, oil, garlic, wine, tomatoes. Simmer 25 mins.
- Add fish heads, salt, pepper. Cook 12 mins. Remove heads, bone them, and puree meat back into pan.
- Add squid. Simmer 45 mins. Add shellfish juice.
- Add fish pieces. Cook 5 mins. Add shrimp, cook 2-3 mins. Add shellfish meat.
- Serve immediately with bread.
