  • Veg: 1 red bell pepper 1 yellow bell pepper, 1 small red onion, 1 garlic clove, 1/2 jalapeño (seeded)
  • Dressing: 3 tbsp rice wine vinegar or white vinegar, 2 tsp sugar, salt, pepper

Instructions
  1. Finely chop all vegetables (pulse in processor).
  2. Mix with vinegar, sugar, and seasonings.
  3. Chill for 4 hours to meld flavors.
  4. Drain excess liquid before serving.
