Ingredients
  

Main Ingredients
  • 8 veal shanks, 1 1/2 inches thick, tied
  • 1 cup onion chopped fine
  • 2/3 cup carrot chopped fine
  • 2/3 cup celery chopped fine
  • 4 tablespoons butter
  • 1 teaspoon garlic chopped fine
  • 2 strips lemon peel
  • 1 cup dry white wine
  • 1 cup meat broth
  • 1 1/2 cups canned plum tomatoes coupled
  • 1/2 teaspoon fresh thyme
  • 2 bay leaves

Method
 

Instructions
  1. Sauté onion, carrot, celery in butter. Add garlic, lemon peel.
  2. Dredge shanks in flour. Brown in oil. Place on top of vegetables.
  3. Deglaze oil pan with wine. Pour over shanks.
  4. Add broth, tomatoes, herbs. Liquid should come 2/3 up shanks.
  5. Braise in 350°F oven for 2 hours.
  6. Serve with sauce.
