- Cook pancetta in oil. Brown meat and remove.
- Sauté onion.
- Return meat. Add celery, garlic, 1/2 cup wine. Cover.
- Cook on very low heat 3 hours, adding remaining wine gradually.
- Slice thin and serve with the concentrated sauce.
