A luxurious pot roast braised in Amarone, Verona’s intense dried-grape wine. The sauce is concentrated, dark, and extraordinarily flavorful.

Ingredients
  

Main Ingredients
  • 2 tablespoons chopped pancetta
  • 2 pounds beef chuck
  • 3/4 cup chopped onion
  • 1/2 cup chopped celery
  • 2 garlic cloves
  • 1 3/4 cups Amarone wine
  • Olive oil

Method
 

Instructions
  1. Cook pancetta in oil. Brown meat and remove.
  2. Sauté onion.
  3. Return meat. Add celery, garlic, 1/2 cup wine. Cover.
  4. Cook on very low heat 3 hours, adding remaining wine gradually.
  5. Slice thin and serve with the concentrated sauce.
