Main Ingredients
  • Stew: 1 onion 1 green pepper, 1 red pepper, 2 cans kidney beans, 1 can chopped tomatoes, 1 lb spicy turkey sausage
  • Seasoning: 1 tsp red pepper flakes 1 tsp thyme, 1 tsp sage
  • Base: 2 cups brown or red quinoa

Equipment

  • Large pot
  • Saucepan (for quinoa)

Method
 

Instructions
  1. Sauté onion, garlic, and peppers. Add beans and tomatoes.
  2. Brown the sausage separately, slice, and add to the pot with herbs. Simmer 45 mins.
  3. Meanwhile, cook quinoa in water until tender and water is absorbed.
  4. Fluff the quinoa with a fork.
  5. Serve the rich bean stew ladled over the fluffy quinoa.
