  • 2 clementines, or 1 mandarin, or 1 navel orange
  • 2 teaspoons honey
  • ½ teaspoon vanilla extract
  • 2 tablespoons white whole-wheat flour, whole-wheat flour, or all-purpose flour
  • 2 teaspoons unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • 2 pinches kosher or sea salt, divided
  • 1 tablespoon dark chocolate chips

Instructions

  1. 1Coat the bottom of a coffee cup, a six-ounce ramekin, or a small microwave-safe bowl with the olive oil.
  2. 2Grate the orange with a citrus zester directly into the cup to yield about one-quarter teaspoon of zest.
  3. 3Halve the orange and squeeze two tablespoons of juice into the cup, adding a splash of water if needed to reach the full amount.
