Sweet young peas sautéed with garlic, olive oil, and prosciutto. Simple and elegant.

- Shell fresh peas.
- Sauté garlic in oil until nut-brown. Remove garlic.
- Add prosciutto, cook briefly.
- Add peas, parsley, pepper.
- Add 1/4 cup water (for fresh) or cover (for frozen).
- Cook until tender (5 mins frozen, 15-30 mins fresh).
- Boil away excess liquid. Salt and serve.
