These savory baked potatoes feature thin slices of russet potatoes layered with olive oil and a robust spice blend. Ingredients

  • 5 to 6 russet potatoes, very thinly sliced and divided
  • 1/4 c. extra-virgin olive oil, divided
  • 2 t. garlic powder
  • 2 t. seasoned salt
  • 1/2 t. celery salt
  • 2 t. salt
  • 2 t. pepper

Instructions

  1. 1Set aside the dried parsley to use as a garnish for the potatoes.
  2. 2Grease a 13 by 9 inch glass baking pan and arrange half of the thinly sliced potatoes in an even layer. Drizzle half of the olive oil over the potatoes. Mix the garlic powder, seasoned salt, celery salt, regular salt, and pepper together in a small bowl, then sprinkle half of this seasoning blend over the layer.
  3. 3Layer the remaining potato slices on top, drizzle with the rest of the olive oil, and season with the remaining spice mixture. Sprinkle the dried parsley over the top and cover the pan tightly with aluminum foil. Bake at 375 degrees Fahrenheit for 35 to 45 minutes until the potatoes are completely tender.
  4. 4Prepare your serving area a day or two before a large holiday meal by setting out and labeling platters for each specific dish.
  5. 5Transfer the hot baked potatoes to their designated serving dish so you can get dinner on the table quickly.
