Spiced Veg & Lemony Bulgar Salad

This bright salad features charred spiced vegetables served over plump bulgar wheat. A sweet and spicy harissa-honey glaze gives the aubergines and red peppers a deep, smoky flavor. It comes together quickly for a light weeknight dinner or a satisfying lunch. The tender roasted vegetables contrast beautifully with the citrusy grains and a creamy yogurt finish.

Ingredients

  • 2 tbsp vegetable oil
  • 2 tbsp clear honey
  • 2 tsp harissa paste
  • 2 small aubergines, cut into wedges
  • 1 red pepper, seeded and cut into chunks
  • 140g/5oz bulgar wheat

Instructions

  1. 1Whisk the vegetable oil, honey, and harissa paste together in a small bowl. Drizzle half of this mixture over the aubergine wedges and red pepper chunks, seasoning them generously. Heat a griddle pan and cook the vegetables for 10 to 15 minutes, turning occasionally, until they are tender and lightly charred.
  2. 2Place the bulgar wheat into a large heatproof bowl and pour in enough boiling water to submerge the grains completely.
  3. 3Cover the bowl and let the grains steep for 10 minutes until they become soft and plump. Drain any excess water, then stir in the remaining honey-harissa dressing, lemon zest, lemon juice, and mint leaves.
  4. 4Season the bulgar wheat mixture to taste and toss well to combine. Spoon the charred vegetables over the dressed grains and finish with a drizzle of Greek yogurt.
