- Wash fresh spinach (remove stems if mature).
- Cook in covered pan with just clinging water and salt until tender (10 mins). Drain well.
- Sauté garlic in olive oil until nut-brown. Remove garlic.
- Add spinach to hot oil, toss for 2 minutes.
- Serve at once.
