Squid stuffed with aromatic porcini mushrooms and braised in white wine. An earthy, elegant variation on stuffed calamari.

Ingredients
  

Main Ingredients
  • 1 ounce dried porcini mushrooms, reconstituted
  • 4 whole squid with sacs 4 1/2 to 5 inches long
  • 2 teaspoons chopped garlic
  • 2 tablespoons chopped parsley
  • 1/3 cup fine, dry unflavored bread crumbs
  • Extra virgin olive oil
  • 1/2 cup dry white wine
  • Salt & Black pepper

Method
 

Instructions
  1. Cook chopped reconstituted porcini in their soaking liquid until dry.
  2. Mix stuffing: tentacles, porcini, garlic, parsley, crumbs, 1 tbsp oil.
  3. Stuff sacs, sew shut. Reserve 1 tbsp mixture.
  4. Brown sacs in oil. Add salt, pepper, wine, and reserved stuffing.
  5. Cover and simmer 45+ minutes.
  6. Slice and serve with pan juices.
