  • 6 whole squid with sacs 4 1/2 to 5 inches long
  • 1 egg
  • 2 tablespoons parsley chopped fine
  • 1/2 teaspoon garlic chopped
  • 2 1/2 tablespoons freshly grated parmigiano-reggiano cheese
  • 1/4 cup fine, dry unflavored bread crumbs
  • Extra virgin olive oil
  • 4 whole garlic cloves PLUS 1/2 teaspoon chopped
  • 1/2 cup canned imported Italian plum tomatoes, chopped
  • 1/4 cup dry white wine

Method
 

Instructions
  1. Clean squid, reserve tentacles. Chop tentacles fine.
  2. Mix stuffing: chopped tentacles, egg, parsley, garlic, cheese, crumbs, oil.
  3. Stuff sacs 2/3 full. Sew or pin shut.
  4. Brown whole garlic cloves in oil, discard cloves. Brown squid sacs.
  5. Add tomatoes, chopped garlic, wine. Cover and simmer 45-50 mins.
  6. Slice and serve with sauce.
