Sweet and Sour Tuna Steaks, Trapani Style

Fresh tuna steaks are smothered in a caramelized onion sauce enriched with sugar, vinegar, and wine. A luscious Sicilian sweet and sour seafood dish.

Ingredients
  

Main Ingredients
  • 2 1/2 pounds fresh tuna, cut into 1/2-inch-thick steaks (1.1 kg)
  • 3 cups onion sliced very, very thin (720 ml)
  • 1/3 cup extra virgin olive oil (80 ml)
  • Salt
  • 1 cup flour (140 g)
  • Black pepper, ground fresh from the mill
  • 2 teaspoons granulated sugar
  • 1/4 cup red wine vinegar (60 ml)
  • 1/3 cup dry white wine (80 ml)
  • 2 tablespoons chopped parsley

Method
 

Instructions
  1. Cook onions in 2 tbsp oil until wilted, then deeply browned. Remove onions.
  2. Add remaining 2 tbsp oil to pan. Dredge tuna in flour, sauté 2-3 minutes.
  3. Add salt, pepper, sugar, vinegar, wine, and the onions. Cover and cook on high 2 minutes.
  4. Uncover, add parsley, turn fish. Transfer fish to platter.
  5. Deglaze pan with a little water if needed, scraping up residues. Pour sauce over tuna and serve.
