Fresh tuna steaks are smothered in a caramelized onion sauce enriched with sugar, vinegar, and wine. A luscious Sicilian sweet and sour seafood dish.

- Cook onions in 2 tbsp oil until wilted, then deeply browned. Remove onions.
- Add remaining 2 tbsp oil to pan. Dredge tuna in flour, sauté 2-3 minutes.
- Add salt, pepper, sugar, vinegar, wine, and the onions. Cover and cook on high 2 minutes.
- Uncover, add parsley, turn fish. Transfer fish to platter.
- Deglaze pan with a little water if needed, scraping up residues. Pour sauce over tuna and serve.
